NJONJA OEI COOKING CLASS
In the history of Babah Culture, the result of
the fusion of the three cultures was not only a new culture but
also created the dining ritual as well as the choices of the menu.
These dishes were then known as Babah cuisine. These were dishes
that were not the ambitious creations of world famous chefs but
more the results of the experiments of the Babah wives (known as
Nyonya) as well as the house-cooks and maids (known as Bedienden
or Bedinde). These women of the Babah family had lived to know the
rich collection of available spices in the island inside and out.
They knew how each spice and each ingredient tasted, and how the
various combination made exotic outcomes. They knew the traditional
Javanese food, the European dishes as well as the original Chinese
cuisines. Slowly they experimented with all the ingredients to produce
dishes that clicked with the tongue and taste of the mixed-culture
family members.
The Bedinde in the Babah homes commonly ate within the comfort of
the house kitchen and many of these kitchens have a very unique
character and flair. This was inspired the creation of Dapur Babah
by the owner/designer of Tugu Hotels and exotic spas, Anhar Setjadibrata.
His Dapur Babah recorded the specific history of family Oei, a Babah
family who lived in Java. To relive the Babah Culture, Dapur Babah
has made a Cooking Class Program called Njonja Oei Cooking Class
where in this event Dapur Babah will share its special dish recipes
of the fused culture.
